Tofu Scramble
This flavorful tofu scramble is a great way to start the morning and tastes great on top of grits.
Ingredients
- 1 shallot 
- 1 clove of garlic 
- 2 Tbsp of olive oil 
- 1 package of medium to super firm tofu (16oz)* 
- 1 tsp chili powder 
- 1/2 tsp salt 
- 1/4 tsp pepper 
- 1/2 tsp smoked paprika 
- 1/4 tsp onion power 
- dash of tumeric 
- sun dried tomatoes in oil 
- handful of spinach 
Instructions
- Prepare tofu, pressing out excess water, and crumbling with hands into a bowl. 
- Heat oil in non-stick skillet over medium-high heat. Dice shallot and garlic. 
- Once skillet is heated, sautée shallot until lightly browned, seasoning to taste. Add in garlic and stir together. 
- Add in tofu, mixing with shallots and garlic. Add in spices, stirring until tofu is evenly coated. 
- Roughly chop spinach and slice sundried tomatoes into strips if not pre-sliced. Add in sundried tomatoes and spinach, cook everything together for a few minutes. 
- Reduce heat to let cool and enjoy! - Notes - * Medium and firm tofu you may need to press out excess water. Super firm tofu you may be able to use right away.
